Хоровац: больше, чем просто блюдо на гриле
Узнайте об армянских способах приготовления на гриле, популярных видах мяса и о том, как сделать заказ для полноценной трапезы.
What the name tells you
Khorovats refers broadly to barbecue or grilled food in Armenian cooking, rather than one fixed recipe. Pork, lamb, beef, chicken, and vegetables may appear, depending on the restaurant and its community. The cut, marinade, heat, and time over the grill all shape the result. Do not assume that two places using the same dish name will offer identical portions or seasoning.
Choose cuts with the meal in mind
Boneless pieces are convenient for sharing and eating with bread, while bone-in cuts can require a little more time at the table. Ask which cuts are on a combination plate and whether substitutions are possible. Grilled tomato, pepper, or eggplant can be a welcome counterpart to rich meat. Rice and potatoes play different roles: one absorbs juices, while the other adds a more substantial roasted or fried element.
Delivery and leftovers
Grilled food continues to release moisture inside a delivery container. If you are collecting the order, go close to the ready time and avoid a long extra trip. Keep cold accompaniments separate. Refrigerate perishable leftovers promptly and reheat them thoroughly; use a food thermometer rather than judging safety by surface color. A good ordering question is not simply 'What is best?' but 'Which grill plate travels well for a twenty-minute ride?'
